How the wine is made

Viticulture that resembles nothing else

An island covered in black volcanic ash, with almost no rain, strong sun and constant Atlantic winds. After the eruptions of the 18th century, local growers turned the harsh land into an ally.

Picónpicón

A porous volcanic layer covers the soil. It captures the night humidity, carries it to the roots and stops evaporation under the sun.

Hollowshoyos

Each vine grows in a deep hollow dug into the ash, protected by a low semicircular stone wall against the wind.

Hand harvestvendimia

No machine can pass between the hollows. Every bunch is picked by hand, vine by vine.

Must bankBodega Vulcano

Part of the must is kept at low temperature and fermented later in the year, giving fresh, precise wines in small batches.
